Hard to say, most siphon is made in kissaten (old school coffeehouses), so the coffee is generally very dark and chocolatey. That being said, Cafe Obscura offers great medium roast options. They are pros at siphon. Also, Blue Bottle in Aoyama has a very good state-of-the art siphon setup.
Thanks for the quick reply Eric. I’m going to Tokyo on Tuesday and wanted to check out the coffee scene. I didn’t know they have a Blue Bottle there, I may have to swing by there too. I’ll for sure check out Cafe Obscura.
